Spotlight on Research Excellence: Dr. Ivana Beveridge

Beveridge, Ivana, Prabhu, Jaideep, Blackburn, Katherine, and Berry, Christopher. (2025) “The influence of personal and pro-social concerns on consumers’ evaluation of meat substitutes” British Food Journal, https://doi.org/10.1108/BFJ-09-2024-0923

Abstract

Consumers’ reactions to meat substitutes are strikingly complex, according to recent research that analyzed over 33,000 Reddit conversations using textual analysis. Far from binary “pro” or “against” attitudes toward meat substitutes (or meat), individuals balance nuanced personal concerns such as taste, health, and price with pro-social motivators like culture, environmental impact, and animal welfare. These multiple concerns interactively influence evaluations, counterbalancing one another depending on context. For example, there is diversity within animal welfare interpretations: while committed vegans see it as avoiding meat completely, many meat eaters who care about animals define animal welfare as supporting small, family farms; they are ethically motivated by local or pasture-raised meat, distinguishing their choices from large-scale factory farming. Also, meat holds a strong symbolic meaning, often associated cultural identity, while choosing to reduce or forego meat is a counter-normative act that challenges established social norms. The study illustrates these notions with terms such as ‘franken meat’ or ‘zombie apocalypse’ affiliated with meat substitutes that challenge traditional food norms. Thus, no single message focused on health, animal welfare, culture, or environmental concerns alone can sway all consumers. Instead, effective marketing and policy interventions must address these intertwined concerns, using nuanced labeling and culturally sensitive branding. Understanding this complexity is key to advancing sustainable food choices.

About the author

Dr. Ivana Beveridge is Head of Marketing, Communications and Media Programme at SUAD. Her research interests include sustainable food, intercultural consumer behavior, and energy transition. Her food-related research focuses on the sustainability and efficiency of food systems, exploring how advanced technologies such as blockchain can enhance system efficiency, especially upstream with benefits for the farmers. She also studies the influence of societal and personal factors on the adoption of novel food categories and examines how adopting sustainable food diets can influence broader sustainable lifestyles and anti-consumption. Ivana also has industry experience with global marketing agencies, working with a diverse client portfolio that includes Fortune 100 companies, governments, and startups. She has a PhD from Sorbonne University, France.
